Jus de la Folie is a pétillant naturel made from Chardonnay sourced in Beaujolais and vinified by Domaine Nøvice. The wine is bottled during fermentation to create natural bubbles. Bright notes of green apple, pear, and apricot combine with lively acidity, resulting in a playful and refreshing sparkling wine.

Chardonnay Boutasse comes from the Boutasse lieu-dit in Poligny, planted on Lias marl soils typical of the Jura. The wine is fermented and aged in stainless steel before being bottled unfined and unfiltered with no added sulfur. Bright citrus notes and pronounced saline minerality give the wine a cool, marine character, resulting in a precise and energetic Jura Chardonnay.

Domaine Nøvice, established in 2019 by Jura native Yves Roy-Salomon went headfirst into nothing added and nothing removed winemaking. PNV Merchants. The 2022 “Trouillot” Chardonnay is sourced from 50-year-old vines in the Trouillot Batard lieu-dit in Poligny, planted on lias marl soils. Fermented and aged in fibreglass tanks for eight to nine months, the wine is bottled without fining, filtration, or added sulphites. A generous chardonnay, with the jura-esque typical acidity and nuttiness.
