Join us for a tasting dedicated to the wines of Viti Vini Vinci, the micro-négociant project of Nicolas Vauthier. Formerly a sommelier and co-founder of Aux Crieurs de Vin in Troyes, Vauthier began making wine in 2009 with the aim of highlighting lesser-known appellations of northern Burgundy through organic farming and minimal intervention in the cellar.

Working from Avallon, near Chablis, Vauthier sources fruit from organically farmed vineyards in Irancy, Épineuil, Chitry, and the surrounding area, as well as from selected parcels further south in the Languedoc and elsewhere. These sites are chosen for their high-altitude exposure, active limestone soils, and the quality of the farming. The wines are typically low in alcohol, high in natural acidity, and structured without excess extraction.

Vinification is done without additives or inoculations. All fermentations are spontaneous. Extraction is gentle, aging takes place in neutral barrels or stainless steel, and sulfur is added only when necessary.

Wines to be poured:

• Bourgogne “Épineuil Vals Noirs” 2022 – Pinot Noir from a site north of Chablis. Destemmed, fermented in concrete, and aged in old barrels. Light-bodied with red cherry fruit, marked salinity, and precise tannins.

• Irancy “Les Ronsardes” 2022 – Pinot Noir from a south-facing lieu-dit in Irancy. Co-fermented with a small amount of César. More structured and darker in tone, with firm acidity and savory grip.

• Vin de France Sauvignon 2022 – Sauvignon Blanc from northern Burgundy. Direct press, fermented and aged in stainless steel. Linear and saline, with citrus pith, green herbs, and a touch of lees texture.

• Vin de France Carignan 2022 – From 60-year-old vines in the Languedoc. Whole bunch fermented, aged in old wood. Red-fruited and lifted, with minimal tannin and moderate acidity.
