Yves Roy makes most of his wine on a single south-facing coteau, “Trouillot”. There he bought 3.5 ha of meadows and started planting in 2019. Something that is worth highlighting, since you always hear about a lack of vines for sale in Jura, but less often about people taking the time—and the attached risk—to plant new vineyards. The soils of the coteaux are limestone-rich, ideal for the vivid and precise reds Yves wants to make.

Domaine Nøvice, established in 2019 by Jura native Yves Roy-Salomon went headfirst into nothing added and nothing removed winemaking. PNV Merchants. The 2022 “Trouillot” Chardonnay is sourced from 50-year-old vines in the Trouillot Batard lieu-dit in Poligny, planted on lias marl soils. Fermented and aged in fibreglass tanks for eight to nine months, the wine is bottled without fining, filtration, or added sulphites. A generous chardonnay, with the jura-esque typical acidity and nuttiness.
