This mountain (yama) label sake is the opposite of the typical light, crisp dry style in Japan. It’s very dry, but it doesn’t taste harsh thanks to the relative high acidity and deep umami, giving it a rich, full-bodied feel. Akishika brews it slowly with their own self-grown natural rice. It is unpasteurized, unfiltered, and undiluted. Drink it cold, room temperature, or gently warmed. One of our favourite pairings with sushi.
