Made by Sylvain Jacquot in his Cramans cellar, this Trousseau is from his own, organically farmed vines aged between 40 and 100 years! The grapes undergo a 2-3 week maceration before fermenting spontaneously in old Burgundy barrels and larger demi-muids where the wine matures for one year. Bottled unfined and unfiltered, without sulfur! A more rustic and traditional but also generous and fruity.
