A Nebbiolo chinato from Turin. The base is Nebbiolo from the Rabajà cru in Barbaresco, about two years old, supplied by Giuseppe Cortese. Quinine bark and herbs and spices are steeped in neutral alcohol, sweetened with white cane sugar and blended into the wine. Labelled Chinato, as no legal category exists for one made on Barbaresco. A pure and deep drink and, as Italians call it, a “vino da meditazione” rather than an aperitif. Non-vintage, 500ml. Drink with one cube of ice in a small stemmed tasting glass.
