Chaflorie 2023 is Clos de l’Epinay’s first pétillant naturel, made entirely from Chenin Blanc from young vines grown on cold clay and flint over limestone soils. Fermentation occurs with indigenous yeasts in stainless steel tanks, without added sulfur. The result is a fresh, crisp wine with aromas of poached pear and cooked apple, finishing with a mineral edge reminiscent of gunflint. On the palate, it is clean and uplifting, with a smooth, balanced texture and subtle effervescence.
