At a 2022 Amsterdam tasting, Bouju urged us to hold his wines at least three years. The 2021 is the more classically structured of the two vintages and has responded beautifully: red fruit, iron, earthy spice and the saline minerality of Auvergne basalt, with tannins now fully integrated and real old-vine texture emerging.
