Two thirds of Chardonnay 2008 from old vines + one third of Marc from 2006, distilled in a copper post-still and partially fermented. It’s a “Single cask” bottling — a unique barrel! Aged 9 years in a 228-liter barrel and 6 years in bottle. Bottled on 22/11/2017 — released on 28/01/2023. pH 3.12 — residual sugars: 175 g/L.
