The “Professeur” cuvée brings together both old and young vines, drawing from François’ father’s vineyard and younger vines on Sous-Roche. Aged 40 months in old barriques. The 2022 vintage was a solar year with full phenolic ripeness, balancing the terroir’s characteristic minerality with a gentle “memory of sugar.” You sense the warmth of the sun and notes of exotic spice, yet the wine remains dry and precise. No sulphur added.
