Crafted by Houas Boukella, a winemaker inspired by Patrick Desplats’ radical natural techniques, Iflissen blends Grolleau Gris, Chardonnay, Sauvignon Blanc, Chenin, and Cabernet Sauvignon. The grapes undergo a 10-day maceration in buried amphorae before blending with direct-pressed juice. Rented parcels in Rochefort-sur-Loire, rooted in schist and clay soils, contribute freshness and complexity, while vegetation is managed by cutting grass to reduce competition for water. No sulphur is added. Silky textures and tropical fruit notes intertwine with subtle vegetal hints and a clean mineral finish. This is a versatile wine, perfect with seafood or light vegetable dishes.
