Aurora (meaning dawn in Italian) is a reference to a rare native butterfly that you can find in this parcel of young vines, directly on the terraces of “Contrada Caselle”. It’s right above to the I Vigneri winery, in Milo on the Eastern flank of the Etna, almost as far from the Etna crater as it is from the Ionian sea. The soil is a mineral rich and draining sand featuring a large amount of volcanic pumice from eruptions. After manual harvest in the first half of October, the grapes are directly pressed as whole clusters. Although fermentation happens with indigenous yeasts, they do make a small starter or “pied de cuve”. Ageing is carried out in stainless steel and lasts about 6 months.The wine is racked 3 times and clarification is done by natural settling, small doses of sulfur are added before fermentation and bottling.
The 2023 vintage is mineral and lengthy. Hints of tropical fruits, citrus blossom and zest. Good balance between the acidity, salinity and natural bitters, adding a “volcanic” complexity to the wine. Highly gastronomic, pairs well with seafood, light pasta dishes, or Mediterranean salads.
