Mimosa is made from Jaen, also known as Mencía, grown on the granite soils of Portugal’s Dão region. The grapes are destemmed into traditional granite lagars and foot-trodden for three days before the wine finishes fermentation in stainless steel. Juicy blackberry and red cherry flavors combine with bright acidity and soft tannins, making it a lively and refreshing red best served slightly chilled.
