Direct-press of Pinot Gris and Pinot Noir. Aged together in old oak barrels. This cuvée is a pragmatic blend of the two varieties. The high-acid Pinot Noir balances the Pinot Gris with its riper notes and bitters. The Gris also brings low alcohol and higher acidity while the Noir adds structure. Unfiltered and unsulphured.

Not a fixed cuvée. The 2025 came out closer to reddish orange, more colour pulled from the Noir, and for 2026 the Gris looks likely to go with Aligoté instead, for “a little kick, like a lemon”. Laurence on why he keeps making it: “I just find it hard to stop.”

A soft and textured wine, as well as playful alongside different cuisines.
