In 2005 Cesare Fulvio and Federica Turillo left Catania for a terraced clos at 800 m above Randazzo, on Etna’s north face. The vines are around 120 years old. Nerello Mascalese with 10% Cappuccio, crushed by foot, fermented in volcanic stone tanks, 15 months in old 500L barrels. Six years on, the tannin has softened: black cherry, tar, balsamic spice. No sulfur added.
