Michel planted the parcel himself in the early 1990s on an old hay meadow, on land that has never seen chemicals. It sits on warm, draining soils of gravel and calcareous scree. Farming is fully manual and without herbicides. The grapes are fully destemmed and macerated in steel tanks allowing for a long, gentle extraction. After pressing, the wine is moved into large wooden casks.
