This wine is 95% Palomino with a 5% field blend. The old-vine Palomino grapes are grown in sandy soils at Lopez Vineyard in Cucamonga Valley, planted in 1912. Partial skin contact for one week and fermentation in sherry casks and neutral oak barrels lend complexity. Aged for 7 months with a minimal sulfur addition (20 ppm), the wine is dry and textured, with saline minerality and notes of citrus peel and almonds. Its light, oxidative style pairs well with shellfish or hard cheeses.
