Made from Chardonnay vines south of Chablis near Saint-Bris, on active limestone soils, “À Gège” shows the clean precision of northern Burgundy whites. Grapes are hand-harvested, pressed, and fermented slowly with wild yeasts in stainless steel before ageing 12 months in old oak. No additives or sulphur are used. Yuzu peel, pickled plum, and orange blossom mingle with spice and saline grip, framed by bright acidity. Crisp yet creamy, with a faint natural prickle of energy.
