From high-altitude vineyards near Avallon, this 100% Sauvignon Blanc is grown on limestone soils with southwest exposure. Grapes undergo skin contact before fermentation and ageing in stainless steel with native yeasts. Bottled with little or no sulphur, it retains Sauvignon’s signature freshness: lemon pith, grapefruit, and green herbs layered with savoury yeast notes and a fine tannic grip. Texturally firm yet refreshing, finishing on a saline, mineral edge.
