Nicolas Vauthier, a pioneer in natural wine, began his journey with the restaurant Aux Crieurs de Vin in Troyes before shifting to winemaking. After working briefly with Philippe Pacalet, he started Vini Viti Vinci, focusing on overlooked appellations. This Sauvignon Blanc comes from Saint-Bris in northern Burgundy, known for its calcareous clay soils.
