The “G” stands for Grecanico, the dominant grape variety in this cuvée. The Grecanico, most of which is the special strand Grecanico Dorato (typical for the higher North-Western part of the Etna), was sourced from several small high-altitude vineyards, with vines around 80 years old.
The Grecanico, was macerated for a week on the skins and was foot-trodden several times. The rest of the grapes, a blend of native varieties Carricante, Minnella Bianca, Insolia, were pressed in whole bunches in an old 20 hl wooden barrel, with the fermenting must from the macerated Grecanico being added to fill the cask. The wine was left on the fine lees for 12 months before bottling.
The wine has a straw-like color, the nose is very open with inviting aromas of ripe stonefruits, fresh lemon and lime. The wine is characterized by its well-balanced wet and flinty, mineral reduction.
