Cépage: 95% Nerello Mascalese, mixed with field blend of local varieties; Nerello Cappuccio, Alicante (Grenache), Grecanico, Catarratto and Minnella Bianca

Palmentino Rosso is a blend of cuvees, which vary from year to year. 40% of the final blend was produced in the Palmento, with a short maceration on the skins lasting 6 days. The remaining 60% was vinified in an open wooden fermenter for 14 days with the skins and subsequently got pressed into a large old wooden barrel.
The resulting wine is more medium-bodied than Palmento Rosso, with dark flavors of red cherries and more savory and saline undertones.
