Partially macerated white grapes vinified in a Palmento to create a light-structured orange. The field blend comes from multiple parcels in Sicily which are a little different in each vintage. The Cataratto was directly pressed into chestnut casks. The Grillo was macerated for a week before being added to the rest of the grapes, which were foot-trodden in whole bunches into a large oak cask to ferment spontaneously without any added yeast. The finished wine remained on fine lees and was bottled without fining or filtration.

The wine is juicy and textural, with aromas of ripe stone fruits, fresh citrus, and some floral notes. The palate is dry and refreshing with nice bitters and saline minerality.
