Xarel-lo and macabeau (50/50) from Penedes; Former destemmed, latter whole bunch (or vice versa: we only remember Aaron Ayscough being gravely against the coin-flip-fuelled-decision). The part that was macerated was for seven days.
What’s in the name? It’s a political concept about causing a distraction by throwing a dead cat on a table (dixit Boris Johnson). Is there more to tell? “You can also tell them how much gas we guzzle doing négoce making natural wines”
Anyway: enjoy. It’s aromatic with a focus on bitter tones while maintaining freshness. Bottoms up!
