This macerated Chenin Blanc is from the same grapes as Sylvain’s Goutte d’O. A blend of massale-selection vines planted in 2018 on clay-limestone soils and old vines from the highest part of the parcel with marl and oyster fossils. The skins are macerated for six months in qvevris. Once pressed it’s returned to the qvevris for another six months of ageing before bottling. Notes of yellow fruits, dried flowers, and juniper, with a layered and structured palate. This wine really impressed us by its minerality and complexity. One to age! No sulphur is added.
