This wine comes from a 0.8 ha parcel of young, ungrafted massale-selection vines in Contrada Caselle, just above the I Vigneri winery in the village of Milo. Milo is the only commune permitted to produce Etna Bianco Superiore, the highest-ranking whites under the DOC. Grapes are harvested in mid-to-late October and pressed directly. Fermentation and aging take place in 500 L oak casks for about 12 months, with small sulfur additions before fermentation and bottling.
Compared to its “little sister” which ages in larger 2,000 L casks, this version is broader and more austere at first, marked by high acidity and a natural volcanic minerality of salt and flint. With time, the wine develops citrus and bitter notes, finishing long and textured. A gastronomic white and one of the Foti family’s most age-worthy bottlings.
