This bottling is produced from a 0.8 hectare parcel of young ungrafted Carricante vines in Contrada Caselle, in the village of Milo just above the Foti winery. Harvest takes place in mid-to-late October, with direct pressing and fermentation started by a pied de cuve of indigenous yeasts. The wine refines for 12 months in 2000 liter wooden casks and receives small sulfur additions before fermentation and bottling.
Compared to the “big sister” matured in 500 liter casks, the 2000 liter version develops with more breadth and less austerity in its youth. Milo’s Carricante profile of citrus bitters, high acidity, salt and flint minerality remains but the larger vessel allows the wine to stay fresher. It is still regarded as one of the most age-worthy whites produced by the Foti family.
