Made from different Chenin Blanc parcels ranging 35 to 55 years old. Harvested ripe and in an aromatic phase, the wine has length and acidity. Nicolas wanted to make and release a wine with enough age to form tertiary aromas and show something not only ready-to-drink but truly gastronomic. Aged 2 years in concrete tanks and 2 years further in bottle. Made without additives and sulfur.
